Recipe: Hatteras Red Wine Cake

Ingredients:
  • 1 cup butter
  • 1 cup white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 (12-ounce) package semisweet chocolate chips
  • 2 teaspoons baking powder
  • 2 ¼ cups all-purpose flour
  • ½ cup Hatteras Red wine
  • 4 tablespoons unsweetened cocoa powder
  • Chocolate syrup to taste
  • Almond slivers to taste
  • Fresh raspberries to taste
Directions:
  1. Preheat oven to 350 degrees F (170 degrees C). Grease a 9-inch cake pan.

  2. In a large bowl, mix butter, sugar and eggs until smooth and creamy; add the vanilla and chocolate chips and mix well.

  3. In a small bowl, mix baking powder and flour; add to creamed mixture.

  4. Add Hatteras Red wine and mix well, but not for too long. Add cocoa powder to taste.

  5. Bake in preheated oven for 45 minutes to 1 hour; let cool and decorate with chocolate syrup, slivered almonds and raspberries. Serve.
