Recipe: Cotton Candy Cheesecake Shots

Ingredients:
  • 8 ounces cream cheese, softened
  • 3/4 cup confectioners sugar
  • Half of an 8-ounce tub of whipped topping such as Cool Whip, plus more for garnish
  • 3-4 tablespoons Duplin Cotton Candy blush
  • 3-5 drops red food coloring
  • Blue or pink cotton candy
Directions:
  1. Place cream cheese and confectioners' sugar in a medium bowl.
  2. Using a mixer set at medium speed, blend cream cheese and confectioners' sugar until well combined.
  3. Using a spatula, fold in whipped topping.
  4. Add Duplin Cotton Candy blush a tablespoon at a time until mixture is the consistency of soft frosting.
  5. Stir in a few drops of red food coloring to tint the mixture pink.
  6. Load cream cheese mixture into a piping bag or a zip-top baggie with a small hole cut in one of the bottom corners.
  7. Pipe the mixture into 8 to 10 large shot glasses (1½-ounce shot glasses).
  8. Garnish each shot glass with a dollop of whipped topping and a tuft of blue or pink cotton candy. Do not add the cotton candy until just before serving.
  9. Serve cheesecake shots with mini-spoons.
  10. Makes 8-10 servings.
