Bacon Crackers Duplinized
We just took the average bacon cracker recipe and blasted it into the stratosphere of deliciousness. Our out-of-this-world version trades thin Club-style crackers for thick, hearty Duplin Gourmet Homemade Crackers. And forget basic brown sugar. We brushed these crackers with zesty Duplin Gourmet Muscadine Pepper Jelly. They're irresistable on their own, but even better with a load of Duplin's Famous Cheese Dip spread on top.
Ingredients:
- For the crackers:
- 24 Duplin Gourmet Homemade Crackers
- 4 slices thin-cut bacon
- ½ cup Duplin Gourmet Muscadine Pepper Jelly
- For the Duplin Famous Cheese Dip
- 1 (8-ounce) block of cream cheese, softened
- ½ jar of Duplin Gourmet Muscadine Pineapple Habanero Salsa or Muscadine Pepper Jelly
Directions:
Line a large baking sheet with parchment paper. Lay a on a cooling rack over a baking sheet.
Preheat oven to 350 degrees.
Trim fatty ends from bacon. Cut bacon into pieces the same size as the crackers or slightly larger. Place bacon-covered crackers on the rack. Leave about a half-inch of space between crackers.
Place Duplin Gourmet Muscadine Pepper Jelly in a small bowl. Microwave the jelly on high for 10 to 15 seconds, just until the jelly liquifies. Alternately, heat the jelly in a small saucepan over low heat on the stove. Let jelly cool slightly.
Brush a thin layer of jelly completely over the bacon on each cracker.
Bake crackers for 40 minutes.
While crackers are baking, prepare the cheese dip: Place cream cheese in a large bowl. Using a hand or stand mixer, blend the cream cheese for 2 minutes on medium speed until it’s light and fluffy, scrapping down the sides as needed. Gradually mix in the Duplin Gourmet Muscadine Pineapple Habanero Salsa or Muscadine Pepper Jelly. Mix at medium-high speed for about, about 2 minutes, until the mixture is light and fluffy.
Place finished dip in a serving bowl and refrigerate. Remove from refrigerator about 20 minutes before serving.
Remove crackers from the oven. Cool for 10 minutes.
Serve crackers with cheese dip.
Makes 8 servings (3 crackers per serving).
