Cotton Candy Cheesecake Shots
What could be more fun than mini, pink cheesecake shots decorated with cotton candy? These get a little zip from Duplin Cotton Candy blush wine. They look so pretty on a bunch buffet, and everyone smiles when you break them out as an after-dinner dessert surprise. Don't add the cotton candy until just before serving. And mini spoons are required to get every bit of sweet goodness out of the shot glasses.
Ingredients:
- 8 ounces cream cheese, softened
- 3/4 cup confectioners sugar
- Half of an 8-ounce tub of whipped topping such as Cool Whip, plus more for garnish
- 3-4 tablespoons Duplin Cotton Candy blush
- 3-5 drops red food coloring
- Blue or pink cotton candy
Directions:
- Place cream cheese and confectioners' sugar in a medium bowl.
- Using a mixer set at medium speed, blend cream cheese and confectioners' sugar until well combined.
- Using a spatula, fold in whipped topping.
- Add Duplin Cotton Candy blush a tablespoon at a time until mixture is the consistency of soft frosting.
- Stir in a few drops of red food coloring to tint the mixture pink.
- Load cream cheese mixture into a piping bag or a zip-top baggie with a small hole cut in one of the bottom corners.
- Pipe the mixture into 8 to 10 large shot glasses (1½-ounce shot glasses).
- Garnish each shot glass with a dollop of whipped topping and a tuft of blue or pink cotton candy. Do not add the cotton candy until just before serving.
- Serve cheesecake shots with mini-spoons.
- Makes 8-10 servings.
