Duplin Party Nachos

Our nachos start by sauteing ground beef with taco seasonings and a little sweetness for hugely popular Duplin Hatteras Red wine. Just a half-cup goes into the meat, which means plenty will be left to sip with the nachos and that's a good thing. Hatteras Red pairs oh so well with spicy Mexican foods. 

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 package of taco seasoning mix or a blend of your own
  • 2-3 large garlic cloves, crushed
  • ¼ cup Duplin Hatteras Red wine
  • ½ of a large bag of corn tortilla chips
  • 1 cup cooked black beans, rinsed and drained
  • ½ to 1 cup chopped Bermuda onion
  • ½ to 1 cup canned chopped tomatoes with green chilies, drained
  • ½ to 1 cup frozen corn, thawed
  • 1 ½ cups cup shredded cheddar or jack cheese or a blend of both
  • TOPPINGS:
  • ½ to 1 cup sour cream
  • Duplin Gourmet Muscadine Red Pepper & Onion Relish
  • Duplin Gourmet Muscadine Pineapple Habanero Salsa

Directions:

  1. Warm a large skillet over high-heat. Add olive oil to the pan. Add ground beef, taco seasoning mix and garlic to the beef. Stir and break up beef with a large spoon to combine with seasonings. Add Duplin Hatteras Red wine.
  2. Reduce heat to medium and cook beef until its no longer pink, about 10 minutes, stirring and breaking up beef about every 3 minutes.
  3. Drain beef and set aside.
  4. Preheat oven to 400 degrees.
  5. Place tortilla chips in a single layer on a sheet pan large enough to hold the chips with a little overlapping of chips. Bake in preheated oven for 3 minutes. Remove chips from oven.
  6. Evenly spread ground beef over the chips in the pan.
  7. Evenly spread black beans over the beef. Do the same with the onions then the canned tomatoes with green chilies followed by the corn. Sprinkle cheese evenly over all the chips.
  8. Bake nachos until cheese is melted and topped are heated, about 5 minutes.
  9. Spoon Duplin Gourmet Muscadine Red Pepper & Onion Relish over half of the nachos. Spoon Duplin Gourmet Muscadine Pineapple Habanero Salsa over the other half. Drop little dollops of sour cream all over the nachos.
  10. Serve nachos with Duplin Hatteras Red wine.
  11. Makes 4 servings.
