Goin' Coastal BLT & Avocado
When it comes to the best sandwich, it's hard to beat the classic bacon, lettuce and tomato stack better known as a BLT. Something about that crunchy, salty bacon dancing with juicy, vine-ripe tomatoes and creamy mayonnaise always makes us send a blessing the unknown cook who first layered up these ingredients.
Ingredients:
- 12 slices bacon
- ½ cup Duplin Goin’ Coastal wine
- 4 slices bread, toasted
- 4 tablespoons mayonnaise
- ½ of an avocado, cut into ¼-inch thick slice
- 1 medium tomato, cut into ¼-inch thick slices
Directions:
- Lay bacon slices in a medium-size, shallow, glass baking pan. Pour Duplin Goin’ Coastal wine over the bacon. Cover pan and refrigerate bacon for 4 hours or overnight.
- Remove bacon from the pan. Discard wine. Pat bacon slices dry and lay bacon directly on the mesh rack of an air fryer oven. Set oven to 400 degrees and cook bacon until crispy. You could also cook the bacon in a conventional oven set to convection heat. Lay bacon on sheet pan or on a broiler pan rack set over its pan. Cook bacon at 400 degrees convection heat for 12 to 15 minutes. Alternately, fry the bacon until crispy.
- Remove bacon from pan and drain on a rack or paper towel.
- Assemble sandwich. Place two slices of bread on a cutting board. Spread 2 tablespoons of mayonnaise on each slice. Lay avocado slices over mayonnaise. Lay bacon over avocado. Place another slice of bread over each sandwich.
- Cut sandwiches diagonally. Serves 2.
