Herb Grilled Tuna Steaks
Thick tuna steaks get vibrant flavor from marinating in fresh dill and oregano plus a splash of soy sauce, lemon juice and Duplin soft-dry Moonlight Bliss white wine. Cook the steaks on a gas or charcoal grill for a touch of smoke and then fan slices of the fish over stunning vegetables or a colorful salad. The result is a delicious and healthy meal.
Ingredients:
- ¼ cup orange juice
- ¼ cup Duplin Moonlight Bliss white wine
- ¼ cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon chopped fresh oregano or ½ teaspoon dried oregano
- 1 teaspoon dried or 1 tablespoon fresh dill
- ½ teaspoon freshly ground black pepper
- Two 1½-inch-thick tuna steaks (about 1 1/2 pounds)
Directions:
- Mix together the orange juice, Duplin Moonlight Bliss white wine, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, dill, and black pepper in a shallow glass baking dish large enough to hold both tuna steaks in a single layer.
- Place the tuna steaks in the marinade and turn to coat. Cover the dish and refrigerate for at least 30 minutes or up to 8 hours.
- Set a gas grill on high heat or prepare a high-heat fire on a charcoal grill.
- Lightly oil the grill grate and place it over the flame or the heated coals. Place the tuna steaks on the grate and cook for 5 to 6 minutes on each side, basting with marinade about halfway through cooking on each side. The center of tuna should be pink.
- Remove tuna steaks from the grill. Discard any remaining marinade.
- Cut the steaks against the grain into 1/4-inch-thick slices. Fan slices on a plate over vegetables, salad or rice. Serve immediately.
- Makes 2 to 4 servings.
