Lime Cotton Candy Mojito

The beauty of Duplin Lime Cotton Candy is that it's not only refreshing on its own over ice, but the wine also works as a tasty cocktail mixer. This easy mojito recipe lets you make a batch to share. Mojitos usually require muddled mint, but this easy recipe calls for adding chopped mint to the pitcher. Do this no more than 30 minutes before serving so the mint doesn't discolor. Be sure to strain the mojito into tall glasses of ice to avoid too many bits of mint in each sip. Garnish the drinks with beautiful bunches of mint so that guests get the herb's delightful aroma everytime they lift their drinks. 

Ingredients:

  • 1 bottle of Duplin Cotton Candy Lime white wine, well chilled
  • 2 cups sparkling lemonade or lemon-lime soda, well chilled
  • Juice of 1 fresh lime
  • Optional: 6 ounces white rum
  • Simple syrup, to taste (see bartender’s note)
  • 3/4 cup chopped fresh mint leaves
  • Garnish: Lime slices
  • Garnish: Fresh mint sprigs

Directions:

Bartender's note: Make simple syrup by blending two parts sugar to one part water. For example, 1 cup of sugar to 1/2 cup water. Gently heat the mixture just until sugar dissolves. Set aside to cool before using. Store in the refrigerator.

  1. Pour wine, sparkling lemonade and half of the lime juice into a large pitcher and stir gently.
  2. If using rum, gently stir it in now.
  3. Taste the mixture. If it needs more tang, add the rest of the lime juice. If it needs more sweetness, add simple syrup to taste.
  4. Right before serving, add the chopped mint to the pitcher.
  5. Strain the mixture into tall glasses of ice. Garnish each glass with bunches of fresh mint sprigs and a sliced lime.
  6. Make about 10 servings.
